Ingredients:
• 2 cups – basmati Rice
• 1 cup – chopped vegetables (potatoes, carrots, cauliflower, capsicum, broccoli, beans and pealed green peas)
• 1/2 onion, finely chopped
• 1/2 handful – Mint leaves, chopped finely
• 1 – green chilli, slit vertically
• 1 tbsp. Garam Masala
• 1/2 tsp – Red Chilli powder
• 1 – Bay Leaves
• 1 inch piece – Cinnamon stick
• 2 – Cloves
• 1 tsp – Cumin seeds
• 2 tbsp – oil
• Salt to taste
Method:
- Heat oil in a pressure cooker, add cumin seeds, bay leaf, cinnamon and cloves.
- Saute for a while and add the chopped onions and the slit green chilli.
- Fry until onions are golden brown.
- Wash rice and soak for about 15 mins.
- Add the soaked rice to the fried onions in the cooker and fry for 2 mins till the dampness goes.
- Then add the vegetables, salt, chilli powder, garam masala powder and the chopped mint leaves with 4 cups of water and mix well.
- Cook till done, mix well, serve.
