Ingredients:
• For the dhokla batter:
• 1 cup -sooji (semolina)
• 1.5 cup – Curd
• A small piece of Ginger grated
• 2 – Green chillies cut fine
• Less than 1/4 tsp – soda bicarbonate
• 2 tbsp – oil
• 2 tbsp – Lemon juice
• 1 tsp – Turmeric
• Salt to taste
• For green chutney:-
• 1 bunch – coriander
• 3 – Green chillies
• 5 – flakes Garlic
• Tamarind water/Lime juice
• Few roasted Peanuts (remove skin)
• Salt to taste
• Pinch of Sugar
• For tadka:-
• 2 tsp – Mustard Seeds (rai)
• Few Curry leaves
• 2 – Green chillies (slit)
• For garnishing:-
• Chopped Coriander leaves
Method:
- Boil water in a large pan.
- Grease a steel thali and keep aside.
- Now take all the ingredients of the dhokla batter and mix it nicely in a dish. Do not add the soda.
- Mix all the ingredients nicely till the mixture is smooth.
- Then mix the soda.
- Wait for 5 minutes.
- The batter will rise.
- Now put this mixture into the greased thali and steam for 10 minutes on high flame and for another 5 minutes on low flame.
- Now remove it and cool.
- Cut the dhoklas into squares.
- Then heat a little oil and add mustard seeds till they crackle.
- Add the green chillies, the curry leaves.
- Stir for a minute.
- Add the tempering on top of the dhokla.
- Garnish with coriander.
- Serve with green chutney.
- For the green chutney, just grind all the above mentioned ingredients for the chutney in a blender and serve.
