Ingredients:

• 1.5 cups – Rice Flour
• 1/2 cup – Methi Leaves, chopped
• 1/4 cup each – Curry leaves and Coriander Leaves, chopped
• 1- Onion, medium sized, chopped finely
• 1 – Carrot, grated
• 2 – Green Chillies, chopped finely
• Salt to taste.

Method:

  1. Mix all the ingredients in a bowl and add water and mix to get a dough which is slightly softer than that for chapattis.
  2. Even if the water is slightly more its okay.
  3. Now take a pan with handle, smear oil on it and take a round of the dough on the pan.
  4. Pat it into a thin round shape with your palms using some water if necessary.
  5. Now keep it on medium flame and cook, pour a tsp oil on the sides and cover with a plate.
  6. After few mins, remove the plate and cook uncovered after turning the side.
  7. Serve with coconut chutney. This type of roti is not only very tasty but also very nutritious.
