Ingredients:

• 1 cup – Ragi flour
• 3/4 cup – Jaggery
• 2 – eggs
• 5 tbsp – Oil
• 1/4 cup – Cashewnut cut into small pieces
• 1 tsp – Baking powder
• 1/2 tsp – Baking soda
• 2- Ripe Bananas

Method:

  1. Make jaggery syrup with 1/4 cup water. Allow it to cool.
  2. De-seed the dates and soak the dates in jaggery syrup overnight or for 6 hours.
  3. Beat eggs, oil, banana and jaggery with dates.
  4. Sieve the Ragi with baking powder and baking soda.
  5. Dust the nuts with little flour.
  6. Mix dry and wet ingredients.
  7. Pre-heat the oven at 180 degrees centigrade.
  8. Bake the cake at 180 degree C for 30 to 40 mins. If think cake is very dry, soak with orange juice.
