Ingredients:

• 1 cup – basmati Rice
• 3/4 cup – Sugar
• 3 cups – boiling water
• 1/2 tsp – Cardamom powder
• 1 small piece – Cinnamon
• 1 cup – golden Raisins
• 1/2 cup – pure Ghee
• A little Saffron colour dissolved in 2 tsp of water

Method:

  1. Wash and soak basmati rice for 15-20 mins. Heat ghee in a skillet.
  2. Drain the rice.
  3. Add to ghee, and saute for 5 minutes, till golden colour.
  4. Add boiling water to rice.
  5. Simmer uncovered till half-done (approx 10 mins).
  6. Add raisin and let it cook, till rice is just about but not yet done.
  7. Add sugar, cinnamon, cardamom and saffron.
  8. Cook till all water dries up.
  9. Serve hot.
