Ingredients:

• 3 cups – Carrots, cut into pieces
• 3 cups – Cauliflower, cut into florets
• 2.5 tsp – Red chili powder
• 1 tsp – Turmeric powder
• 5 tbsp – Mustard, powdered
• 1 tsp – Mustard Seed
• 1 tsp – Oil
• Salt to taste

Method:

  1. Boil 2 litres of water
  2. Add the vegetables and remove from heat after 2 minutes.
  3. Drain water after 2 minutes.
  4. Lay the vegetables on a towel to dry for an hour.
  5. In a bowl, mix the powdered spices.
  6. Add vegetables to the spices and mix well.
  7. Heat oil and splutter the mustard seeds, add to the vegetables.
  8. Leave in the bowl for 8 hours stirring occasionally 2-3 times.
  9. Let it mature in a jar for 4-5 days.
