• 2 tbsp cooking oil
• 1 big Onion
• 2 tbsp Lime juice
• 4 tsp curry powder
• 1 cup Chicken broth
• 200gm boneless Chicken
• 2.5 tsp ground Ginger
• 1 small green pepper (chopped)
• 1 heaped tsp Corn starch
• Coriander to garnish
• Salt to taste


  1. Cut chicken into sma;ll pieces and marinate with 1.5 tsp ginger and oil Heat oil and fry thinly sliced onions till brown
  2. Put in marinated chicken and fry till golden
  3. Put in curry powder and fry for one more minute stirring constantly
  4. Add chicken broth; boil and simmer for 10 mins
  5. Blend corn starch, rest of ginger, lime jiuce in a small bowl and stir into mixture
  6. Continue cooking till mixture thickens and bubbles (approx. 1 min)
  7. Stir in tomato wedges and chopped capsicums and simmer 3 mins longer
  8. Garnish with coriander and serve with hot rice
