Ingredients:

• 4 eggs
• 1.5 cups – flour
• 1.5 tsp + 1 pinch – baking powder
• 1.5 cups – castor Sugar
• 1.5 cups – Butter
• 4-5 tbsp – grated Coconut
• 1 tbsp – Lime juice
• 1 tbsp – vanilla essence
• 4-5 tbsp – Raspberry jam

Method:

  1. Preheat oven at 180 degree C. Sieve the flour along with baking powder and keep aside.
  2. Cream butter and sugar in a bowl.
  3. Add egg one at a time, followed by the lime juice, vanilla and flour mixture.
  4. The batter will be thick and not runny.
  5. In a greased tray, sprinkle some coconut and pour the batter.
  6. Drop half of the jam over the batter and sprinkle the remaining coconut.
  7. Bake in the preheated oven for 40 minutes or till a toothpick inserted in the centre comes out clean.
  8. Let it stand for 10 minutes.
  9. Brush the remaining jam over the cake and serve.
