Ingredients:
• 1 – small red pepper
• 1 – small yellow pepper
• 1 – medium pink Onion
• 1 – small ripe Tomato
• 2 – fresh Red Chillies
• 2 – flakes garlic, peeled
• 1 – small piece of ginger, peeled
• 8 to 10 – Peanuts
• 1 tbsp – Tomato ketchup
• 1 tsp – any Vinegar
• 1 tsp – mustard paste
• 1 tsp – Brown sugar
• 1 tbsp – Olive oil
• salt to taste
Method:
- Chop peppers, onion and tomato roughly.
- Heat oil in a pan. Add onions and stir fry for a minute.
- Add peppers, tomato, ginger, garlic and chilli.
- Stir fry for 3-4 minutes, or till wilted.
- Take off fire and allow to cool to room temperature.
- Transfer to a grinding jar.
- Add all other ingredients.
- Grind to a rough paste, not too smooth.
- Refrigerate till required.
- Serve with vegetable crudites, nacho chips, crackers, over canapes, etc.
