Ingredients:

• 1 bunch – fresh red Spinach or green (red Spinach tastes better)
• 2 tsp – grated fresh Coconut
• 2 tsp – oil
• 1 tsp – Mustard Seeds
• 2 – Curry leaves
• 3 – Garlic flakes
• 1/2 tsp – Turmeric powder
• 1.5 tsps – Chilli powder
• Salt
• Oil

Method:

  1. Chop spinach.
  2. Heat oil in a pan and fry mustard seeds and curry leaves.
  3. After the seasoning is done, add chopped spinach and salt.
  4. Grind coconut, turmeric powder and chilli powder.
  5. Add this into pan.
  6. Put some garlic flakes onto pan.
  7. Cover and simmer for a few minutes.
  8. Serve this curry with hot rice.
