Ingredients:
• 1/2 kg – Rice
• 1 bunch – Coriander leaves
• 8-10 Cloves – Garlic
• 8-10 – Green chillies
• Salt to taste
• 1 tsp – Turmeric powder
• Mustard Seeds
• 2 tsp – Oil
• 1-2 – Brinjals (cut in fours)
• 1-2 – Potatoes (cut in cubes)
• 4-5 – Small size Onions (peeled)
Method:
- Soak the rice.
- Make a paste of coriander leaves, garlic and green chillies.
- In a thick bottom vessel put 2 tsp of oil. When the oil is hot add mustard seeds.
- Once the seeds splutter, add the ground masala, salt and turmeric powder.
- Fry the masala till golden brown.
- Add the rice and cook till done.
- For the Vegetables:
- Masala is the same as for the rice, except the mustard seeds.
- In a kadai put oil and fry the masala till golden brown.
- Add the vegetables and little water and cook till the vegetables are done.
- Eat with the rice.
