Ingredients:
• 1 cup – Rice
• 1/4 cup – moong dal (yellow)
• 1 medium – Potatoes
• 1 – large Brinjal
• 1 – Onion medium
• 1/4 cup – Green peas
• 1 – carrot, medium
• 4 – Green chillies
• 1/4 cup – Coconut grated
• 1 tbsp – oil
• 1 tbsp- Mustard Seeds
• 1 tbsp – Urad Dal
• Curry leaves
• Coriander leaves
• salt
Method:
- Dice potatoes and carrot. Cut brinjal and onions into long slices. Slit green chillies.
- Fry moong dal in a dry pan and keep aside.
- Add oil and allow mustard seeds to pop.
- Then add urad dal and fry.
- Add curry leaves and green chillies.
- Add onions and fry till it becomes tender.
- Add other vegetables and fry for 10 minutes.
- Add grated coconut.
- In a pressure cooker or rice cooker, pour 4 cups water, add rice, moong dal and fried vegetables. Add salt for taste.
- Allow it to cook and garnish with coriander leaves.
- Serve hot with sambar and pappad.
