Ingredients:
• 180 g – Butter
• 230 g – Sugar
• 1/2 tsp – baking powder
• 150 g – mixed fruit
• 30 ml – Milk
• 230 g – all purpose flour
• 4 – eggs
• 1/2 tsp – vanilla essence
• 50 g – Almonds
Method:
- Blanch almonds and chop. Mix the fruit with the almonds.
- Beat eggs with vanilla essence and set aside.
- Cream butter and sugar and add the beaten eggs gradually.
- Fold in half the flour and fruit mixture into the creamed mixture and mix thoroughly.
- Fold in the remaining flour and fruits.
- Add milk to get a good consistency.
- Grease and flour an 8 inch baking tray and pour in the cake mixture.
- You can add the remaining fruit and chopped almonds on top.
- Bake at 350 degree Fahrenheit for about 40 minutes.
- After this, switch off the oven and leave it inside for around 10 minutes.
- Remove from the oven and place it on a wire rack to cool.
