Ingredients:

• For topping:
• 4 tbsp – golden syrup.
• 1 tin – sliced pineapple| For cake:
• 2 – eggs.
• 200 gm – flour.
• 1.5 tsp – baking soda.
• 1/2 tsp – Cinnamon powder.
• 115 gm – Butter or margarine.
• 140 gm – castor sugar.
• Milk – 1/4 cup.
• 1 pinch – salt| To decorate:
• Cherries.
• Walnuts.

Method:

  1. Grease and line a tin for baking.
  2. Pour the golden syrup into the tin.
  3. Drain the pineapple slices from the syrup.
  4. Arrange the slices at the bottom of the tin.
  5. Place a cherry each in the centre of the pineapple slices.
  6. Now prepare the cake mixture.
  7. Cream the butter and sugar till light and fluffy.
  8. In a steel bowl, beat the eggs and add to it.
  9. Sieve the flour with baking soda.
  10. Add cinnamon powder, salt, milk, mix and pour the batter over the pineapples.
  11. Bake at 400 degrees F for about 40 mins.
  12. Cool for about 5-10 mins.
  13. Turn it upside down on a wire rack.
