Ingredients:
• For topping:
• 4 tbsp – golden syrup.
• 1 tin – sliced pineapple| For cake:
• 2 – eggs.
• 200 gm – flour.
• 1.5 tsp – baking soda.
• 1/2 tsp – Cinnamon powder.
• 115 gm – Butter or margarine.
• 140 gm – castor sugar.
• Milk – 1/4 cup.
• 1 pinch – salt| To decorate:
• Cherries.
• Walnuts.
Method:
- Grease and line a tin for baking.
- Pour the golden syrup into the tin.
- Drain the pineapple slices from the syrup.
- Arrange the slices at the bottom of the tin.
- Place a cherry each in the centre of the pineapple slices.
- Now prepare the cake mixture.
- Cream the butter and sugar till light and fluffy.
- In a steel bowl, beat the eggs and add to it.
- Sieve the flour with baking soda.
- Add cinnamon powder, salt, milk, mix and pour the batter over the pineapples.
- Bake at 400 degrees F for about 40 mins.
- Cool for about 5-10 mins.
- Turn it upside down on a wire rack.
