Ingredients:
• 1.5 lb. – chicken, cut into medium-large sized pieces
• 2 tbsp – all-purpose flour
• 1 tsp – chilli powder (or to taste)
• 1 tsp – black pepper powder
• 2 tbsp – fresh Lime juice
• 2 tsp – ginger-garlic paste
• Salt to taste
• Food colouring – a little (optional)
• 1 tsp – Vinegar
• 2 tsp – Olive oil
• Butter – to coat the baking dish.
Method:
- Take a bowl and mix all of the mentioned ingredients (except oil) and allow them to marinate for 3-4 hours (or refrigerate for 2 hrs).
- Smear the insides of a large baking dish with a little butter, and then place the marinated chicken pieces with adequate spacing (do not crowd in many pieces together).
- Drizzle a bit of olive oil on top and set the dish in the preheated oven at 400 degree F for 35 minutes.
- After 35 minutes, remove the baking dish from the oven, turn the pieces to the other side.
- Drizzle in some more olive oil and sprinkle some black pepper powder and salt.
- Put it back in the oven for another 20 minutes or until crispy and golden on all sides.
- Serve hot with sliced onions and lime slices.
