Ingredients:

• 2 cups – basmati Rice
• 1 – whole baby chicken, cut into bite size pieces
• 1 tsp – pepper powder
• 2 tsp – Saudi kabsa spice mix
• 1 – onion, sliced (optional)
• mixed fruit and nuts like cashew, almonds, sultanas or Raisins
• Salt – as required
• 2 tbsp – Olive oil or Ghee
• For kabsa spice mix:
• Turmeric
• Red Chilli
• Whole Black Peppercorns
• Ginger(use powder or fresh)
• Whole Cloves
• Black Cardamom pods
• Coriander seeds

Method:

  1. Wash the chicken well and cut into pieces.
  2. Rub the chicken pieces in salt and pepper.
  3. Heat the oil in a pan, fry the nuts, fruits and set aside.
  4. Then fry the sliced onions and set it aside.
  5. Now fry the chicken pieces in same oil.
  6. Once they slightly brown on each side, add the kabsa spice mix and mix well.
  7. Add some water and cover the pan.
  8. Keep the heat in medium and cook, till the chicken gets cooked.
  9. Once the chicken is completely cooked, add the washed rice, 4 cups of water and salt to taste.
  10. Cover the pan, cook in medium heat, until the rice is cooked.
  11. When serving the rice, sprinkle the nuts and fried onions on top.
  12. Serve the rice warm, with yogurt and salad.
