Ingredients:

• 3 – eggs
• 1 – Onion
• 1/2 – Tomato
• 1 – Ginger
• a bunch – coriander leaves, chopped
• 1/4 – Coconut
• 1/4 – Potato
• 1 tsp – chilli powder

Method:

  1. Fry the potato in a little oil with salt till it is soft.
  2. Slightly crush the tomato with a spoon. Crush the ginger, too.
  3. Now mix all the ingredients, with the potatoes and some salt, in a bowl.
  4. Heat oil in a pan and scramble till the onions are soft, tomatoes are cooked and eggs are golden brown.
