Ingredients:

• Brinjals – 1/2 kg
• Onion – 1 big
• 1 inch piece – Ginger
• Garlic paste – 1 tsp
• Coriander powder – 1 tsp
• 1/2 tsp – Jeera
• 1/2 tsp – mustard
• Salt to taste
• Pinch – Turmeric
• Chilli powder – 1/2 tsp

Method:

  1. Fry onions till light brown colour, add ginger-garlic paste and fry till the raw smell goes.
  2. Add mustard seeds, jeera, coriander powder, salt, chilli powder, turmeric and fry for few minutes.
  3. Now grind into a coarse paste.
  4. Pour oil in a pan, add the onion paste and fry.
  5. Mean while slit brinjal into 4 pieces retaining the stalk
  6. Now add the brinjal to the paste, add required quantity of water and cook till done.
  7. Finally garnish with freshly cut coriander.
