Ingredients:

• 1 cup – Maida
• 1/2 tsp – baking powder
• 2 tsp – Lemon rind
• 1/2 tsp – vanilla essence
• 1/2 cup – margarine or Butter
• 1/2 cup – powdered Sugar
• 2 eggs, separated
• 1/2 cup – Milk
• 1 tbsp – Lemon juice
• For Topping:
• 2 tsp – Cinnamon powder
• 2 tbsp – Sugar

Method:

  1. Mix maida with baking powder.
  2. Cream butter, sugar, egg yolks and rind and vanilla together.
  3. Fold in maida with milk and lemon juice.
  4. Beat the egg white stiffly and fold into the cake mixture.
  5. Pour in a greased 8 1/2 inch round microwave proof cake dish.
  6. Combine cinnamon and sugar for topping and sprinkle on top (Optional).
  7. Microwave uncovered on full power for 4-6 minutes.
  8. Allow to stand for 10 minutes.
  9. Cut and serve from the dish.
