Ingredients:
• Potato – 2
• Green peas – a handful
• Carrot – 2
• Beet root – 1, small
• Onion – 1, big
• Green chillies – 4
• Coconut Milk – as per taste
• Curry leaves – few
• Garam Masala – 1 tsp
• Oil – 2 tbsp
• Mustard – 1 tsp
• Cumin – 1 tsp
• Salt – to taste
Method:
- Cut the onions, potatoes, carrot, beetroot, green chillies and keep it aside.
- Heat oil in a pan, add mustard, cumin and let it crackle.
- Then add the curry leaves and chopped green chillies.
- Add the chopped onions and saute.
- When it becomes golden in colour, add all the cut vegetables and peas. Saute for 2-3 minutes.
- Add water to this, cover and cook.
- When the vegetables are cooked, add the garam masala and coconut milk, stir it.
