Ingredients:

• Potato – 2
• Green peas – a handful
• Carrot – 2
• Beet root – 1, small
• Onion – 1, big
• Green chillies – 4
• Coconut Milk – as per taste
• Curry leaves – few
• Garam Masala – 1 tsp
• Oil – 2 tbsp
• Mustard – 1 tsp
• Cumin – 1 tsp
• Salt – to taste

Method:

  1. Cut the onions, potatoes, carrot, beetroot, green chillies and keep it aside.
  2. Heat oil in a pan, add mustard, cumin and let it crackle.
  3. Then add the curry leaves and chopped green chillies.
  4. Add the chopped onions and saute.
  5. When it becomes golden in colour, add all the cut vegetables and peas. Saute for 2-3 minutes.
  6. Add water to this, cover and cook.
  7. When the vegetables are cooked, add the garam masala and coconut milk, stir it.
