Ingredients:

• 1/2 kg potatoes, boiled and peeled
• 1/4 kg Broccoli
• 1.5 cups Coconut Milk
• 2 tbsp yellow curry paste
• 2 onions, chopped finely
• 1/4 cup chopped Carrots
• 3 cups water
• salt to taste
• 1/8 tsp pepper powder
• 2 tsp oil

Method:

  1. Saute onion till transparent. Add water and carrots. Let it boil till the water is reduced to 2 cups.
  2. Method for curry:
  3. Boil the potatoes.
  4. Cook broccoli till half cooked.
  5. Heat oil in a pan.
  6. Heat the other pan.
  7. Put yellow paste and 2 tbsp of coconut milk.
  8. Stir till the mixture becomes dry.
  9. Add 2 tbsp of broth and continue stirring.
  10. When oil separates, add rest of the coconut milk.
  11. Add 1.5 cups of vegetable stock.
  12. Bring it to a boil.
  13. Add potatoes and broccoli.
  14. Let it cook till you get the required consistency.
  15. Serve with rice.
