
Ingredients:
• 1 – Medium sized snake gourd, cut into medium sized pieces
• 3 tbsp – Ground coconut/coconut paste
• 1 tsp – All spice powder/garam masala
• 2 tsp – Chilli powder
• 1/2 tsp – Turmeric powder
• 1/2 tsp – Cumins powder
• salt to taste
• 1 tsp – Coriander powder
• 2 tbsp – Oil
• 1 – Onion, chopped
• 1 tbsp – Chopped coriander leaves.
Method:
- Heat oil in a pan and saute the onions until pink.
- Add the tomatoes, chilli powder, turmeric, coriander powder, spice powder/garam masala powder, Cumins powder and salt and stir fry for a 3-4 mins until the tomatoes soften.
- Now add the snake gourd and the ground coconut and mix well.
- Add 2 cups of water and simmer until the snake gourd is cooked and the gravy thickens.
- Garnish with chopped coriander leaves.
- Serve with rice or chapattis.
