• 1 cup – thick Cream
• 350 to 400 g – Pasta of your choice (boiled and drained)
• 1/2 cup – Butter
• 1/2 cup – toasted walnuts, coarsely ground
• 250 g – soft cheese, cut into pieces
• salt and freshly ground pepper to taste
• chopped Parsley or Coriander leaves


  1. Pour the cream into a pan and bring to a boil.
  2. Boil on low heat for several mins. until the cream thickens and reduces to half the quantity.
  3. Add butter, letting it melt slowly into the cream, keep stirring. Keep warm over low heat.
  4. Add the cheese to the cream, stir until the cheese is partially melted.
  5. Season with salt and pepper to taste, toss in the walnuts just before mixing in the sauce into the pasta.
  6. Garnish with parsley or coriander leaves.
