Ingredients:
• Soya chunks – 100 gm
• Kashmiri chilli powder – 1 tsp
• Vinegar – 1 tbsp
• Ginger – 2 tsp, minced
• Garlic – 2 tsp, minced
• Onion – 1/2 cup, minced
• MSG – a pinch (optional)
• Sugar – 1 tsp
• Soya sauce – 2 tsp
• Mango pulp – 1/2 cup
• Spring onion greens to garnish
• Oil to shallow fry
• Salt to taste
Method:
- Soak soya chunks in hot water for 1/2 hour. Drain, cool and squeeze out all the water.
- Mix chilli powder with vinegar and reserve.
- Heat oil to a depth of 2 cm in a fry pan.
- Add soya chunks and fry, stirring briskly till they are brown.
- Drain and reserve.
- Retain 2 tbsp of oil in the pan and saute ginger, garlic and onion.
- Fry till they are brown and fragrant.
- Add chilli paste and fry for few seconds.
- Add mango pulp, MSG, soya sauce and sugar.
- Simmer the contents in the pan for 2-3 minutes.
- Add the soya chunks and simmer for 1 minute.
- Remove from fire and garnish with chopped spring onion greens.
- Serve hot with fried rice or noodles.
