Ingredients:

• 250 g – spaghetti
• 1 cup – Spinach
• 4 – Garlic pods
• 3 tbsp – parmesan, grated
• 1/2 – Lemon
• 2 tbsp – Pine Nuts (optional)
• 4 tbsp – Olive oil
• Salt as needed
• 2 tsp – chilli flakes

Method:

  1. Boil enough water with salt and cook spaghetti in it as per package instructions.
  2. Once done, drain it and mix a tbsp of oil to it. Keep aside.
  3. Wash spinach leaves and keep it immersed for a minute. Again, wash it in cold water.
  4. Chop it roughly and peel and chop garlic finely.
  5. Heat a pan with 3 tbsp oil in medium heat. Add garlic and cook it for 2-3 minutes in low flame.
  6. When it turns golden, add spinach and mix well.
  7. Switch of the flame and squeeze the lemon. Add pine nuts if desired.
  8. Mix well with the cooked pasta in a large mixing bowl.
  9. Add cheese, little salt, chilli flakes and mix well.
