Ingredients:
• 150 gms – medium sized Potatoes
• 1 big Onion
• 2 to 3 Green chillies
• 2 tbsp – Coriander leaves
• 1.5 piece – Ginger
• 8 flakes Garlic
• 2 tsp – Red Chilli powder
• 1.5 tsp – Turmeric powder
• oil for deep frying
• 10 to 12 fresh pavs
• 1 small bowl green chutney
• juice of 1 Lemon
• salt to taste
• For the Batter:
• 250 gms – gram flour
• 2 tbsp – oil
• 1 tsp – Red Chilli powder
• 1.5 tsp – Turmeric powder
• sufficient water
• salt to taste
Method:
- Boil the potatoes. Peel and mash them.
- Add to it finely chopped onions, green chillies, coriander leaves, coarsely ground ginger and garlic, red chilli powder, turmeric powder, lemon juice and salt to taste.
- Mix well.
- Divide the mixture into equal portions.
- Smoothen each portion into a round shape and then lightly flatten it a little.
- In a bowl, mix gram flour, oil, red chilli powder, turmeric powder and salt to taste.
- Add sufficient water to make the a little thick batter.
- Keep this aside for 15 minutes.
- Heat oil to for to deep fry the wadas.
- When oil reaches a smoking point, dip the wadas into the gram flour batter and slip them into the oil.
- Fry 2-3 wadas at a time.
- Fry till golden in colour on a medium flame.
- Cut each pav into halves.
- Apply some green chutney on one side of the pav.
- Keep the wada and press the other side of the pav on it.
- Serve hot
