Ingredients:

• 150 gms – medium sized Potatoes
• 1 big Onion
• 2 to 3 Green chillies
• 2 tbsp – Coriander leaves
• 1.5 piece – Ginger
• 8 flakes Garlic
• 2 tsp – Red Chilli powder
• 1.5 tsp – Turmeric powder
• oil for deep frying
• 10 to 12 fresh pavs
• 1 small bowl green chutney
• juice of 1 Lemon
• salt to taste
• For the Batter:
• 250 gms – gram flour
• 2 tbsp – oil
• 1 tsp – Red Chilli powder
• 1.5 tsp – Turmeric powder
• sufficient water
• salt to taste

Method:

  1. Boil the potatoes. Peel and mash them.
  2. Add to it finely chopped onions, green chillies, coriander leaves, coarsely ground ginger and garlic, red chilli powder, turmeric powder, lemon juice and salt to taste.
  3. Mix well.
  4. Divide the mixture into equal portions.
  5. Smoothen each portion into a round shape and then lightly flatten it a little.
  6. In a bowl, mix gram flour, oil, red chilli powder, turmeric powder and salt to taste.
  7. Add sufficient water to make the a little thick batter.
  8. Keep this aside for 15 minutes.
  9. Heat oil to for to deep fry the wadas.
  10. When oil reaches a smoking point, dip the wadas into the gram flour batter and slip them into the oil.
  11. Fry 2-3 wadas at a time.
  12. Fry till golden in colour on a medium flame.
  13. Cut each pav into halves.
  14. Apply some green chutney on one side of the pav.
  15. Keep the wada and press the other side of the pav on it.
  16. Serve hot
