Ingredients:

• 250 gms – basmati Rice or long grain Rice, washed and soaked for at least 30 mins
• 1 tbsp – oil
• 4 Cloves
• 4 Black Peppercorns
• 1 tsp – Cumin seeds
• 2.5 (1 inch) Cinnamon stick
• 3 Cardamom pods, opened
• 1 very small onion, sliced
• 250 ml – (1/2 pt.) water
• 2 tsp – salt

Method:

  1. Wash and soak the rice. Drain.
  2. Heat oil and add all the spices and onion.
  3. When the onion is soft, add the rice.
  4. Add the water and salt; stir and bring to boil.
  5. Lower heat, cover and simmer for 40 mins. until the rice is soft to touch.
