Ingredients:

• 12 to 14 – slices bread
• 4 tbsp – sesame seeds, roasted
• 1 small bunch – spinach, finely chopped
• 2 medium – Olive oil/oil
• Onions, finely chopped
• salt to taste
• 2 – Green chillies
• 4 to 5 – medium potatoes, boiled and mashed
• 1 cup – green chutney
• 1 cup – cheese grated (optional)
• 1 medium – tomato, cut into slices and de-seeded
• 1/4 cup – Butter

Method:

  1. Heat olive oil in a pan.
  2. Add onions, green chillies and saute till lightly browned.
  3. Add spinach and salt. Continue to saute.
  4. Add mashed potatoes and mix well.
  5. Arrange bread slices on the work top.
  6. Spread butter and green chutney on all of them.
  7. Spread the potato mixture over the chutney evenly.
  8. Sprinkle grated cheese and roasted sesame seeds.
  9. Finally, place tomato strips on top for garnish.
  10. Place bread slices on non-stick tawa.
  11. Roast till the bread slices turn crisp.
