Ingredients:

• 1 bunch – Spinach chopped
• 1 medium – Onion chopped
• 1 medium – Tomato chopped
• 3 – Green chillies chopped
• 1/2 tsp – Tamarind paste
• 2 cups – water
• 1 tsp – sambar powder
• 1/2 cup – boiled mung bean
• 1-2 stems – Curry leaves
• safoetida (a pinch)
• 1/2 tsp – Mustard Seeds
• salt to taste

Method:

  1. Splutter mustard seeds, add green chillies, onions, chopped tomato, asafoetida and fry for a few minutes.
  2. Add spinach and fry till raw smell goes off.
  3. Now add around 2 cups of water, the tamarind paste,sambhar powder, salt and curry leaves.
  4. Finally, add the boiled moong bean. Bring it to boil for 10-15 minutes.
  5. Serve hot.
