Ingredients:

• 1 cup – rice, washed and soaked for 30 mins.
• 1 cup – sprouted moong
• 2 Bay Leaves
• 2 green chillies, slit
• 4 black pepper
• 2 tbsp – oil
• 3 cups – water
• 1/4 tsp – Turmeric powder
• 5-6 Curry leaves
• 1/2 tsp – Mustard Seeds
• salt to taste
• Make a paste of:
• 1 cup – Coriander leaves
• 1/2 tsp – Garam Masala
• 1/2 cup – grated Coconut
• 2 Green chillies
• 1/2-inch Ginger
• 1/2 tsp – Amchoor (dry mango) powder

Method:

  1. Heat oil in a cooker.
  2. Add mustard seeds and let them splutter. Add bay leaves, chillies, curry leaves and pepper.
  3. Add sprouted moong and turmeric powder.
  4. Simmer for 5 mins.
  5. Add rice, salt and water.
  6. Cook till rice is almost half done.
  7. Add the paste and let it cook till rice is done.
  8. Serve hot with any vegetable curry.
