Ingredients:
• 4 – eggs
• 1/4 tsp – Turmeric powder
• 1/4 tsp – Pepper powder
• Salt as per need
• 1 – Onion (finely chopped)
• 1 – Tomato (big chopped finely)
• 2 – Green chillies (slightly opened)
• 1 tsp – Garam Masala powder
• 1 tsp – Red Chilli powder
• 1/2 tsp – Mustard Seeds and Urad Dal
• 1/4 tsp – Cumin seeds
• Salt as required
• Oil
• 3 -Curry leaves
• 2 tbsp- Coriander leaves (chopped)
Method:
- Take a bowl; beat well for a while the eggs with turmeric powder, pepper powder and salt.
- Take a pressure cooker with little water and heat it.
- Pour the beaten egg mixture into a greased pan or bowl and steam cook (as we do for idlis) in pressure cooker.
- After 5 minutes, check by inserting a toothpick.
- If it is clean put off the stove and take off the steamed egg mixture and keep aside.
- Let it cool and cut it into cubes.
- Heat oil in a kadai, add the mustard seeds, urad dal, cumin seeds and let it splutter.
- Add the onion, tomatoes and green chillies.
- Fry until it is cooked.
- Add garam masala powder, red chilli powder and salt. Stir on medium flame. Once the spices get mixed well, add a cup of water and cook for a few minutes with lid closed.
- Add the steamed cubed egg pieces to the gravy.
- Stir occasionally until the oil separates.
- Add curry leaves and coriander leaves to the masala.
- Serve hot as side dish.
