Ingredients:

• Cucumber 2, medium size
• green Chana (chick peas) – 1 cup, cooked
• fresh curds – 1 cup
• roasted sesame seeds – 3 tbsp
• Tomato – ½ cup, chopped
• Garlic 2 flakes, minced
• green chili – 1 tsp, minced
• Ginger paste – ½ tsp
• green chili paste – ½ tsp
• oil – 1 tbsp
• mustard – 1 tsp
• Curry leaves – 1 tsp, shredded
• Lime juice to taste
• pepper to taste
• salt to taste

Method:

  1. Peel the cucumber and slit into halves.
  2. Scoop out the core and seeds.
  3. Cut the halves into 6 cm thick slices.
  4. Mash the cooked chick peas lightly and combine with sesame seeds, garlic, green chili, salt, pepper and lime juice.
  5. Stuff cucumber pieces with this mixture and arrange on a serving plate.
  6. Sprinkle some tomato pieces on each piece.
  7. Beat curd with ginger and green chili.
  8. Heat oil; add mustard and curry leaves and pour in the curd.
  9. Just before serving, pour the curd on cucumber pieces.
