Ingredients:
• 6 – Bitter gourd
• 1/4 cup – Tamarind pulp
• 1/2 tsp – Turmeric powder
• 1 tsp – Jaggery
• 1/2 tsp – Chilli powder
• For the stuffing:
• 1/2 cup – Tur dal
• 1 tbsp – Coconut
• 4 – Red Chillies
• 1 tsp – Cumin seeds
• Asafoetida – 1/4 tsp
• Turmeric powder – 1/2 tsp
• Salt to taste.
Method:
- Slit the bitter gourd and remove the seeds.
- Now boil it for 5 minute in water and drain to reduce the bitterness.
- Now put it in a bowl and add tamarind paste, jaggery, chilly powder, turmeric powder and salt along with a little water and let it cook.
- Drain it again and keep aside.
- Now soak the tur dal in water for one hour.
- Coarse grind the tur dal, coconut, red chillies, cumin, asafoetida, turmeric powder and salt.
- Do not add any water while grinding.
- Now stuff this into the slit bitter gourd.
- Deep fry the stuffed bitter gourd until both the stuffing and the outer portion gets cooked.
