Ingredients:

• 6 – Bitter gourd
• 1/4 cup – Tamarind pulp
• 1/2 tsp – Turmeric powder
• 1 tsp – Jaggery
• 1/2 tsp – Chilli powder
• For the stuffing:
• 1/2 cup – Tur dal
• 1 tbsp – Coconut
• 4 – Red Chillies
• 1 tsp – Cumin seeds
• Asafoetida – 1/4 tsp
• Turmeric powder – 1/2 tsp
• Salt to taste.

Method:

  1. Slit the bitter gourd and remove the seeds.
  2. Now boil it for 5 minute in water and drain to reduce the bitterness.
  3. Now put it in a bowl and add tamarind paste, jaggery, chilly powder, turmeric powder and salt along with a little water and let it cook.
  4. Drain it again and keep aside.
  5. Now soak the tur dal in water for one hour.
  6. Coarse grind the tur dal, coconut, red chillies, cumin, asafoetida, turmeric powder and salt.
  7. Do not add any water while grinding.
  8. Now stuff this into the slit bitter gourd.
  9. Deep fry the stuffed bitter gourd until both the stuffing and the outer portion gets cooked.
