Tomatoes are stuffed with a rich filling and tempered with butter and spices to make them further rich. Stuffed vegetables always gives you different pleasure to enjoy the meal. Here is another stuffed Indian curry recipe. Stuffed tomatoes are not much time consuming and you can make it for lunch or dinner. Garnish stuffed tomatoes with bhujia and serve hot.

Ingredients of Stuffed Tomato Recipe

– 6 medium sized potatoes
– 6 cherries for garnishing
– 1 cup grated cheese for garnishing

For the Stuffing

– 1 Cup grated paneer
– 1 cup grated cheese
– 2 tablespoon fresh cream
– 2 tablespoon small cashewnuts pieces
– 5-7 raisins
– 1/2 teaspoon sugar
– 3-4 green chilies, finely chopped
– 1/4 teaspoon pepper powder
– Salt to taste

For the Paste

– 2 cup chopped and boiled onion
– 5-6 garlic cloves
– 4-5 green chilies
– 1 tablespoon chopped ginger
– 10 blanched almonds
– 2 cup blanched tomatoes

For the Gravy

– 2 tablespoon oil/ghee
– 1/2 teaspoon garam masala
– 1 teaspoon kasoori methhi
– 1 teaspoon sugar
– 2 tablespoon butter
– Salt to taste
– 2 tablespoon fresh cream
– 1 teaspoon red chili powder

How To Cook of Stuffed Tomato Recipe?

1. Cut a thin slice from the top of each of the tomatoes. Scoop out the center.
2. In a bowl, mix paneer, cheese, cream, cashewnuts, raisins, sugar, green chilies, pepper powder and salt and stuff the tomatoes with it. Keep aside.
3. In the grinder add onions, garlic cloves, green chilies, ginger, almonds and tomatoes and grind them together for the paste.
4. In a pot, heat ghee. Add the paste and fry till oil separates.
5. Add 1 cup of hot water and bring it to a boil.
6. Now, add red chili powder, garam masala, sugar, salt, cream and butter to it.
7. Now, place the stuffed tomatoes in the hot gravy and pour some gravy on the tomatoes.
8. Cook the stuffed tomatoes for 5-6 minutes.
9. Sprinkle the kasoori methi all over the tomatoes.
10. Place the grated cheese on the stuffed tomatoes.
11. Garnish each stuffed tomatoes with the cheery and serve it.
