Ingredients:

• 2.5 cups – flour
• 150 ml – shortening (fat)
• 1.5 cups – Sugar
• 3/4 cup – Milk
• 3 eggs
• 2 tbsp – Lemon juice
• 1 tbsp – grated Orange peel
• 1.5 tsp – grated Lemon peel
• 2.5 tsps – baking powder
• 3/4 tsp – salt

Method:

  1. Combine shortening, orange and lemon peel.
  2. Mix well and add sugar.
  3. Mix until light and fluffy.
  4. Add eggs one by one, beating well after each addition.
  5. Sift together flour, baking powder and salt.
  6. Add to the creamed mixture alternately with lemon juice and milk.
  7. Beat after each addition until smooth.
  8. Bake in a paper-lined round pan, in moderate heat at 375 degree F for 25-30 mins till the cake turns yellowish brown.
