Ingredients:

• 3 cups – cooked chicken, roughly chopped
• 1 tbsp – Butter
• 1 onion, finely chopped
• 1 carrot, finely chopped
• 1.5 – capsicum, finely chopped
• 2 sticks – celery, finely sliced
• 2 tbsp – Corn flour
• 1 tbsp – soya sauce
• 1 tbsp – Brown sugar
• 1 cup – Pineapple juice
• 1 cup – water
• 2 Chicken stock cubes
• salt and pepper to taste

Method:

  1. Place butter and vegetables in a 2-litre casserole dish.
  2. Cook, covered on high for 4-6 minutes.
  3. Blend together corn flour, soya sauce, brown sugar, pineapple juice, water, stock cubes, salt and pepper.
  4. Add to the vegetables and cook on medium for 12-14 minutes.
  5. Stir in chicken.
  6. Heat on high for 1-2 minutes. Serve with rice.
