Delicious, healthy and creamy soup made with sweet corn
1 cup cooked sweet corn kernels (fresh, canned or frozen)
2 finelly chopped spring onion
1 1/2 cups vegetable stock or corn stock
2 tablespoon cornflour (smoothly dissolved in 2 tablespoon milk)
2 teaspoon sugar
1 teaspoon oil or butter
1/2 teaspoon white pepper
1 teaspoon soya sauce (optional)
1 teaspoon vinegar (optional)
Salt to taste
1. Heat oil or butter in a pan and fry onions for 2-3 minutes.
2. Add the corn and vegetable stock or corn stock.
3. Season with sugar, salt and pepper. Add smooth cornflour paste (dissolved in milk), stirring continuously, bring to a boil.
4. Optionally add 1 teaspoon soya sauce and 1 teaspoon vinegar to give it a nice flavour.
5. Serve hot.
