Ingredients:

• 25 – limes
• 1 cup – Vinegar
• 2 tsp – Cumin seeds
• 0.5 tsp – Fenugreek roasted
• 2 – Turmeric
• 3 – Ginger
• 3 pods – Garlic
• 2 tbsp – Mustard Seed
• 1/2 bottle – oil
• 1 – Curry leaves
• 450 gms – Sugar
• 20 – chillies
• 1 tsp – salt

Method:

  1. Wash and chop each lime into 8 pieces.
  2. Sprinkle salt and keep overnight.
  3. Masala:
  4. Grind cumin, turmeric and roasted methi in vinegar.
  5. Add mustard seeds and grind a little, and finally add garlic and ginger.
  6. When done, remove and keep aside.
  7. Preparation:
  8. Heat oil in a large vessel.
  9. Add curry leaves and fry till they change colour and then add the masala and fry for a while.
  10. Let it cook for a little while, then add sliced green chillies
  11. Add sugar, vinegar, chopped limes, etc.
  12. Check the taste, and adjust.
  13. Boil for half an hour on a low fire.
