Ingredients:

• 2 – small onions, thinly sliced lengthwise
• 1/2 tsp – Mustard Seeds
• 2 tbsp – oil
• 2 pods – chopped Garlic
• 1/2 tsp – chopped Ginger
• salt to taste
• 1/4 tsp – Turmeric powder
• 1/2 tsp – Red Chilli powder
• 1 – tamarind, small lime-sized
• 1-2 tsp – Jaggery

Method:

  1. Soak the tamarind in 1/2 cup of warm water and set aside.
  2. Heat oil in a pan, temper with mustard seeds.
  3. Add the sliced onions, ginger and garlic.
  4. Sprinkle some salt.
  5. Fry until the onion turns golden brown.
  6. Extract water from the tamarind (it should be thick) and add to the onions.
  7. Add turmeric powder, red chilli powder, more salt and allow the mixture to cook for about 10-15 minutes or until the raw smell of tamarind goes away and the oil starts to float on top.
  8. Add jaggery powder and mix well.
  9. Serve hot with chapatti or poori.
