Ingredients:
• 2 – small onions, thinly sliced lengthwise
• 1/2 tsp – Mustard Seeds
• 2 tbsp – oil
• 2 pods – chopped Garlic
• 1/2 tsp – chopped Ginger
• salt to taste
• 1/4 tsp – Turmeric powder
• 1/2 tsp – Red Chilli powder
• 1 – tamarind, small lime-sized
• 1-2 tsp – Jaggery
Method:
- Soak the tamarind in 1/2 cup of warm water and set aside.
- Heat oil in a pan, temper with mustard seeds.
- Add the sliced onions, ginger and garlic.
- Sprinkle some salt.
- Fry until the onion turns golden brown.
- Extract water from the tamarind (it should be thick) and add to the onions.
- Add turmeric powder, red chilli powder, more salt and allow the mixture to cook for about 10-15 minutes or until the raw smell of tamarind goes away and the oil starts to float on top.
- Add jaggery powder and mix well.
- Serve hot with chapatti or poori.
