Ingredients:

• 1 – Beetroot
• 2 – Carrots
• 3/4 tsp – sambar powder
• 1 – Onion
• 3 tbsp – grated Coconut
• 1/4 tsp – Turmeric powder
• 1 tsp – oil
• 1/4 tsp – Mustard Seeds
• 1/4 tsp – Urad Dal
• Curry leaves – a few
• Salt as needed

Method:

  1. Grate beetroot and carrots. Chop the onions finely.
  2. Heat oil in a pan and splutter mustard seeds, curry leaves and urad dal.
  3. Saute for a while and add the onions and fry till they become transparent.
  4. Add sambar powder, turmeric powder and salt.
  5. Saute for a minute and add grated beetroot and carrots.
  6. Sprinkle few tbsps of water and keep stirring this.
  7. Add coconut and mix well.
  8. Serve hot.
