Ingredients:

• 1 kg – Raw mango, peeled and grated
• 1 kg – Sugar
• 50 gms – Garam Masala powder
• 50 gms – Onion
• 25 gms – Ginger
• 25 gms – Garlic
• 4 gms – Acetic acid
• 30 gms – Red Chilli powder
• Salt to taste

Method:

  1. Finely chop onion, ginger and garlic and mix well with grated mango.
  2. Add 250 ml water and cook the above mixture till the mango softens.
  3. Add sugar and continue cooking until mixture is sufficiently thick.
  4. Add garam masala and red chilli powder
  5. Add salt and correct the seasoning.
  6. Cook for a further 5 mins.
  7. Remove from heat and add acetic acid.
  8. Allow to cool before bottling.
