Ingredients:

• ripe but firm Mango – 350 gm
• Vinegar – 3 tbsp
• Sugar – 3 tbsp
• chilli flakes – 1 tsp
• chopped Coriander leaves – 2 tbsp
• chopped Peanuts – 2 tbsp
• salt to taste

Method:

  1. Peel the mango and cut into one and a half cm cubes.
  2. In a small sauce pan, combine vinegar, sugar and salt and chilli flakes.
  3. Bring to a boil, simmer for 1 minute.
  4. Remove from fire.
  5. Allow to cool.
  6. Pour the dressing on mango pieces.
  7. Add coriander leaves and peanuts.
  8. Toss well and serve.
