Ingredients:
• 3 cups – Watermelon chunks, deseeded
• 3 cups – muskmelon chunks, deseeded
• 3 cups – cantaloupe chunks, deseeded
• 1 tsp – ginger, finely chopped
• 1 tbsp – soft Brown sugar
• 1 cup – thick Cream
• 1 tbsp – white Vinegar
• 1 – tiny mild green chilli, chopped finely
• 1 sprig – Mint leaves, finely chopped
• 1/4 tsp – pepper, powdered
• 1/4 tsp – salt
Method:
- Cook ginger and brown sugar with 2 tbsp water for 2-3 mins.
- Cool, keep aside till required.
- Put all melon chunks in a large salad bowl.
- Pour sweetened ginger over melons, toss lightly and chill.
- Beat together cream, vinegar, chilli, mint, salt and pepper.
- Just before serving salad, pour cream mixture over it.
- Garnish with a few mint leaves.
