Ingredients:

• 3 – Potatoes
• 1 – Onion chopped
• 1 – Garlic clove, crushed
• 2 tbsp – oil
• 4 tsp – Curry leaves
• 2 tsp – Coconut powder mixed with 1 cup – hot water
• Spices:
• 1/4 tsp – Turmeric
• 1/2 – Green chilli
• 1 tsp – curry powder
• 2 tsp – Cinnamon

Method:

  1. Peel, slice the potatoes into thick chips and boil until just tender.
  2. Drain and set aside.
  3. Fry onion, garlic, all the spices and curry leaves until brown.
  4. Add the coconut milk and bring to the boil for 2 minutes.
  5. Add the potatoes and cook for 2 minutes and serve.
