Ingredients:

• 1 cup – small cubed Tofu
• 3 – eggs
• Salt as per taste
• 1/4 tsp – Garlic paste
• 1 tbsp – chopped Parsley
• 2 tbsp – oil
• For Peanut sauce:
• 1/2 cup – Peanut
• 2 tsp – soy sauce
• 2 tbsp -fish sauce
• 2 tsp – chilli sauce
• 1/3 cup – unsweetened Coconut Milk
• 1 tbsp – Vinegar
• Salt as per taste
• 1 tsp – Ginger paste
• 1 tsp – Garlic paste
• Peanut oil for deep frying

Method:

  1. For peanut sauce: Deep fry the peanuts in smoked peanut oil till golden brown (approx 3-4 minutes). Drain.
  2. Grind the peanuts with 1 tbsp peanut oil.
  3. Add all the ingredients and blend till smooth.
  4. Add more oil if sauce is thick.
  5. For omelette:
  6. Beat eggs with salt.
  7. Fold in tofu and other ingredients except oil.
  8. Heat 1 tbsp oil in a pan.
  9. Pour half of mixture.
  10. Spread over the pan.
  11. Cook it for 5 minutes.
  12. Slide it into plate.
  13. Repeat for remaining mixture.
  14. Spread peanut sauce over the omelettes.
  15. Serve hot.
