Ingredients:

• Tomatoes – 2, sliced
• Cucumber – 1 small, sliced
• For Brinjal spread:
• Brinjal – 350 gm
• Lime juice – 1 tbsp
• sesame seeds – 2 tbsp, roasted
• Garlic – 2 large pearls
• Olive oil – 1 tbsp
• finely chopped Parsley – 1/2 cup
• salt to taste

Method:

  1. Smear brinjals with little oil and bake in a hot oven till soft.
  2. Peel the skin.
  3. Chop the flesh and blend in a mixer.
  4. Blend in the lime juice.
  5. Crush garlic and sesame seeds to a paste and mix in.
  6. Add salt to taste.
  7. Add parsley.
  8. Spread on bread. Add chopped cucumber and tomatoes to make sandwich.
