Ingredients:
• Tomatoes – 2, sliced
• Cucumber – 1 small, sliced
• For Brinjal spread:
• Brinjal – 350 gm
• Lime juice – 1 tbsp
• sesame seeds – 2 tbsp, roasted
• Garlic – 2 large pearls
• Olive oil – 1 tbsp
• finely chopped Parsley – 1/2 cup
• salt to taste
Method:
- Smear brinjals with little oil and bake in a hot oven till soft.
- Peel the skin.
- Chop the flesh and blend in a mixer.
- Blend in the lime juice.
- Crush garlic and sesame seeds to a paste and mix in.
- Add salt to taste.
- Add parsley.
- Spread on bread. Add chopped cucumber and tomatoes to make sandwich.
