Ingredients:
• 1 cup – Tomato puree
• 2 cups – fresh spinach, torn
• 2 tbsp – Butter
• 1 large yellow onion, chopped
• 1 tsp – minced Garlic
• 1 1/2 cups – Milk
• 1 tbsp – white Sugar
• 1/4 cup – chopped fresh Basil
• 1/4 tsp – freshly ground black pepper
• 1 tbsp – Grated parmesan cheese
• 1/2 tsp – salt
Method:
- Melt butter in a large saucepan over medium heat.
- Saute onion and garlic for 3 mins.
- Add milk and cook for 2 mins. Keep stirring occasionally.
- Add tomato puree and sugar.
- Mix well, cover and bring to a boil over high heat.
- Reduce heat to low.
- Simmer and cover for 5 mins.
- Add spinach, basil, salt, pepper and simmer (uncovered) for 2 mins. Keep stirring occasionally.
- Sprinkle with parmesan cheese, if desired.
