Ingredients:
• 1 kg – Tomato (ripe)
• 1/2 kg – Sugar
• 1/2 cup – Vinegar
• salt
• To grind (with a little vinegar):
• 15 g – Garlic
• 15 g – Ginger
• 10 g – dry Red Chillies
Method:
- Scald and skin tomatoes. Cut into pieces. Make into a puree.
- Add the ground masala, sugar, vinegar and salt. Simmer gently over a low heat until the consistency of a chutney is reached.
- Cool and store in a glass jar.
