Ingredients:

• 4-5 – ripe tomatoes, chopped
• 2 – large onions, chopped
• 6 – flakes of garlic, chopped
• 1/2 inch piece of Ginger chopped
• 4 – green chillies, slit
• A small bunch of coriander leaves, chopped
• 1/2 tsp – chilli powder
• 1/4 tsp – Turmeric
• 4 – Cloves
• 1 – Cardamom
• 1/2 inch piece of Cinnamon
• 4 – boiled eggs (optional)

Method:

  1. Heat oil and add cloves, cardamom and cinnamon.
  2. Add onions, garlic and fry till golden brown.
  3. Add tomatoes, green chillies, ginger, chilli powder and turmeric.
  4. Simmer until the gravy thickens, becomes a deep red and the oil floats on top.
  5. Sprinkle with coriander. You can add boiled eggs to the gravy before removing from the fire, if you like.
  6. Serve with chapatti or rice.
