Ingredients:

• 5 firm red Tomatoes
• 2 cup cooked Rice
• 1 cup canned Tuna
• 2 tbsp finely chopped Capsicum
• 4 tbsp mayonnaise
• 2 tsp crushed Mint
• 2 Green chillies chopped finely
• 1 tsp Lemon juice
• 1/4 tsp black pepper powder
• 1/4 cup chopped Coriander leaves
• Salt as per taste

Method:

  1. Make 4 pieces of tomatoes, vertically scoop the pieces.
  2. Mix rest of all the ingredients well.
  3. Stuff the tomatoes with the mixture.
  4. Refrigerate for at least 1 hour.
  5. Remove just before serving.
